Steam tables were invented over 100 years ago and frankly, they haven't changed much! Until now...
To complement Cookteks Buffet Holding Systems, Cooktek have developed a new Dry Well Holding System or, otherwise known as the Waterless Food Holding Well. Based around gastranorm containers, these induction dry wells, which are triggered when a gastranorm container is placed into the well, this could be either a full 1/1 or 2 x 1/2 size gastranorms.
Cookteks Food Warming System eliminates water, without comprimising food quality, in fact, it improves it. At the same time total energy consumption is cut by half or more!
The Cooktek Food Warming System was designed to accomodate gastranorm pans. The system works with and standard magnetic pan including 18/8 (300 Series) stainless gastranorms, which have been stamped (cold worked) during manufacture.
In developing this bottom heat system, Cooktek have also developed twin focused ceramic, infrared radiators that can be mounted into fabricator designed overhead gantries, giving the right quantity of top heat and light to the food.
The systems are available in two depths, 65mm and 100mm. Diffferent depths should not be mixed in the same appplication, as pan contact with the units temperature sensor is required.
